Chocolate Fiber Muffins

Hi Guys,

I just made the most awesome muffins and have to share!

Chocolate Fiber Muffins
3 cups General Mills Fiber One Cereal
2 cups water
1/2 cup unsweetened cocoa
3/4 cup all-purpose flour
1/2 tsp baking soda
1 Tbsp baking powder
1 1/4 cup Splenda
1 tsp vanilla extract
2 egg white(s)
2/3 cup semi-sweet chocolate chips

Put cereal in water and set aside. Mix dry ingredients and combine with cereal and egg whites. Fold in chocolate chips. Spoon into greased muffin tin. Bake at 350 degrees for 20 minutes.
18 muffins@1 Point each

The Road

The road to success is always under construction. I've been doing Weight Watchers for a long time and I am always making changes as I learn new things-about me, about my health and about food in general. But there are always obstacles out there...Red Lights (trigger foods, Summer Occasions, travel) Loops of confusion, Flats and Potholes of mindless eating, and Speed Bumps...to get our attention! One or all of these can be a problem if we let them. The thing to remember is to Learn from Experience (this is the info makes you the expert on YOU) and, armed with that info, Prepare Yourself for the next time so you can make a better decision. And above all ENJOY YOURSELF! This I can't impress upon you enough. If you make a bad decision, don't beat yourself up over it. Life is too short. Learn from it. It's information you can use to make a better decision next time. Dale Carnagie says: People rarely succeed unless they have fun in what they are doing. I SOOOOOO agree! If there is something you are not enjoying about your weight loss journey...change it-learn to enjoy the process in whatever you do! That's life, Pal, and it's ours to live! So get out there and bee livin' and enjoyin' it 'cause !

Ranch Meatballs
1 meatball= 1 Point
24 frozen meatballs
1-1/2 cups bottled fat free Ranch Dressing
Place meatballs I large pot. Brown to remove grease; drain and rinse with hot water. Return to pot and cover with the Ranch Dressing. Stir to cover the meatballs. Simmer, covered, for 20-30 minutes.

Want a new Honeymoon?

Attention Weight Watchers and those of you on your own weight loss journey: Bet you didn't know there are 5 stages of weight loss. (And I'm not talking about screaming, crying, swearing, striking people and righteous indignation!) Some of us go through all of the stages and others of us just hit a few. The first one is the Honeymoon Stage...we are working hard and doing everything right. Everyone's happy. I learned something about myself here: The reason I change plans so often is because when I change plans I go back to the Honeymoon Stage each time. Guess I'm a sucker for a Honeymoon! I change plans about every 2-3 months...or when I get tired of what I'm doing. Right now I'm doing Core. Isn't it neat-o we have the 2 plans to choose from??? Weight Watchers is always looking out for us! Zanyway, Stage 2 is...as BB King says...the The Thrill is Gone...POOH! But it happens. 'Nuff said. Stage 3 is Renewed Resolve...rethink, re-do and move on! This is where you need to pull out the Helpful Habits-learn from experience and prepare yourself to name 2 biggies. Look back and see what worked for you and what didn't. The "for you" part is really important. This is YOUR weight loss journey and you have to do what works for you AND fits into YOUR lifestyle. Stage 4 is a Re-Visit to the other 3 until you get to stage 5...Lifestyle Change!Oh YEAH! That's what we're working for, right? So there you have it. In the stages of weight loss you are not alone and you are not different. We just all handle them differently according to our lifestyles. Wherever you are start from there and get moving FORWARD. And through it all TAKE CARE OF YOURSELF and treat yourself well! Carve out some time for you each day to pull it all together and stay focused.
Remember: Take care of your body. It's the ONLY place you have to live!!!


The Goodie Box
Mock Cheesecake
THIS IS ADDICTIVE! Thnaks to June in NJ for this great one!!!
4 servings (1/2 cup each) @ 1 Point each
2 cup plain fat free yogurt
1 small box sugar free fat free white chocolate pudding mix
Combine the yogurt and pudding mix and refrigerate for 2-4 hours.
You can serve in individual bowls or put it in a reduced fat graham cracker crust. This will make each serving 3 Points.
OR, top each serving with 1 tablespoon graham cracker crumbs and this will make it 1.5 Points per serving.

Yummy!!! Here is a great little recipe for fun with your kids and/or grandkids! Thanks to Heather in OK for this one!

Mini S'Mores
Golden Mini grahams cereal
Mini marshmallows
Semi sweet chocolate chips
Put Golden Grahams on a microwave safe plate. Top 1/2 of them with a mini-marshmallow and the other 1/2 with a chocolate chip. Microwave for 10-20 seconds, depending on your microwave. Place one chocolate chip graham on top of one marshmallow graham, grahams on the outside. Voila! A mini S'mores! Delish!!!

2 Blessed 2 Bee Stressed!

We are going to my husband's High School reunion this week. The older I get the more I enjoy these things. Probably because I'm still here to go to it! I have had one really near death experience and it was enough to make me greatful for everyday. I love to say "I have good days and I have bad days. But praise God I still have days!!!" Too many of our friends don't...I know I am blessed!

Sometimes I actually forget how old I am. My 4 year old grandson asked me how old I am. I said "63" He thought a minute and said, "I don't think I can count that high." I don't. It's just a number...a high one I admit, but a number just the same. And, as I am quick to tell people, this is not a dress rehersal for the real life...this is it! And I have fun. I think we were created for fun and all the joys life can bring us. If you are not happy chances are it's your own fault. I follow a young lady on Caring Bridge that has sooooo many medical issues and doesn't feel good most of the time...constantly in and out of the hospital. But she never loses her sense of humor or faith or optimism. she finds joy where she can. It's awesome to witness. I look at my life and say, "HEY! I have NO problems!"

Beside my wonderful, caring and supportive husband and my family, doing something I like is a big part of what makes my life happy and relieves much of the stress. We sold our family business of 40 years 2 years ago and retired...HA! I am busier than ever and love it. And my husband feels the same. He is teaching. At the ripe old age of 66 he started on a career that he didn't even know he wanted until he was 60! He went back to school and finished his BA, got his MA and will start on his PhD this Fall at almost 68 years of age! So you see? It's never too late to do something you WANT to do. It's all in your attitude. (I have Cat-itude...ever see a cat that didn't get what it wanted???) I'm not going to school...once was enough for me! But my job is awesome and keeps me busy and seeing so many different people ever week. I am a Weight Watchers Leader and do 12-15 meetings a week. It's a ball! I work with great teams and we help people turn their lives around, get healthier and feel better about themselves. What more can you ask from a job?? It's like a ministry for me. Weight Watchers saved my life and I am really passionate about it and want to share it with any and every one!!! Do you have something you feel that way about? Then you know what I mean.

As I said in the beginning I know I am blessed and I Praise God everyday. I only hope I am using the gifts He gave me as He intended. In the meantimeI remain:

Finally!

I have had this space for over a year and have not posted one time...hmmm...It's not that I have nothing to say...Gads! Ask my family about that...I ALWAYS have something to say. I think the problem lies in WHAT to say out of the myriad of things I have floating about. I am many things. Christian,Wife, Mother, Nana, Friend, Weight Watcher Leader, and a person who suffers from Addisons Disease. All these things together make up who I am. Sometimes good, sometimes not so, but ME none the less. So, here I am with my first post. Feels good. Now I'll get lost in thinking about post #2...stay tuned...
